It’s been FOREVER since I’ve shared a video, but today’s your lucky day, guys: it’s video day!
I feel the need to say I felt so miserable the day I shot this. I worked all day, then took three kids to Kroger, put groceries away, cleaned the kitchen and THEN tried to film this while trying to breathe and heave this heavy baby around. lol. I’m out of breath easy these days and lose my train of thought even easier. (Also, when I was editing this, all I could focus on was how big that belly was. Yikes. At this point, we have a little more than six weeks until this kid is due.)
See? Painful. Here’s the recipe:
Simple Strawberry Vinaigrette
1 cup strawberries
1/4 cup balsamic vinegar
1/4 cup EVOO
1 tsp dijon mustard
1 clove garlic
salt and pepper
Mix everything in the blender, blend, voila!
It makes more than you’ll need for one salad, unless you’re feeding an army, but you can refrigerate and eat salads all week using your own homemade – and very, very easy! – dressing. With the exception of the strawberries, because I just picked them up that morning, I made everything using ingredients I already had on hand, so this cost me an estimated $1 (I paid $1.98 for the container of berries).
Don’t limit yourself to just strawberries, either. You can play around and do raspberries, pomegranate, blueberries, etc.
